Sausage and Potatoes Stew – Vegan

This is an easy, fast vegetarian curry with coconut milk, cooked using vegan sausage and potatoes. I was trying plant based Tofurkey italian sausages for the first time, and wanted to try something different. Plus who doesn’t love a one quick, one pot dinner? 🙂 Serve over white rice, on bread, or with tortillas. Add a refreshing quick salad or cucumber pickles to make a delicious meal. Here it is served with white rice and cucumber pickles. An easy, yummy combination!

This dish is cooked with sausages, potatoes, tomatoes, onions and jalapenos, using coconut milk as the curry base. Thai chillies are added for an extra kick, so if you like heat, feel free to add more thai chillies or habaneros. Gojuchang (korean red pepper paste) is added for extra flavor. If you don’t have gojuchang on hand, substitute with some red curry paste (1 tbsp) or chillie powder (1 tsp). This dish will be delicious even if gojuchang is completely omitted.

Sausage and Potato Stew

Ingredients

  • 4 Sausages Tofurkey italian sausage used here
  • 1 Potato
  • 1 Tomato
  • 1 Jalapeno
  • 1 Red Onion
  • 1/4 Cabbage
  • 5 Garlic cloves
  • 5 Thai Chillies optional, for extra spiciness
  • 1.5 cups Coconut milk
  • 1/2 cup Water
  • 1 tbsp Oil Olive oil

Seasoning

  • 2 tsp Salt
  • 2 tsp Gojuchang korean red pepper paste, optional
  • 1 tsp Chillie powder
  • 1/2 tsp Turmeric
  • 1 tbsp Lemon juice

Instructions

  • Cut sausages and vegetables into bite sized pieces
  • Heat oil in a pan, add sausages, jalapenos, thai chillies, and garlic
  • Fry about 10 mins until sausages start to brown
  • Add chopped onions and cook for 5 minutes
  • Add the rest of vegetables (potato, tomato, cabbage)
  • Add coconut milk, water and all seasonings (except lemon juice)
  • Close cover and cook on medium heat for 5 minutes
  • Open cover and cook for about 10-15 minutes until potatoes are cooked
  • Add 1tbsp of lemon juice and mix well
  • Serve with white rice, bread, naan or tortillas!
