Sri Lankan Green mango curry is a raw mango curry that is very easy to cook and can be served with any Sri Lankan rice and curry. Raw, green mangoes are used in this recipe, along with other spices to make a sweet, sour and spicy tasting curry (almost like a mango chutney). 

How to Cook a Sri Lankan Green Mango Curry WITHOUT Coconut Milk (the Short Version)

To create this dish, onion, garlic, and green chilies are sauteed. Then raw green mangoes and spices are added, and cooked with water until mangoes are very soft. This results in a curry with great depth of flavor, where the sourness stems from the rawness in the green mangoes, sweetness from the added sugar and spiciness from the chilli powder. This dish is the perfect rice puller, tasting almost like a sri lankan mango chutney, and can be created in about 20-30 mins.

What Ingredients do you need to cook this Spicy Sri Lankan Mango Curry?

To cook this easy raw mango curry, you need the following ingredients (including curry spices) :

  • Green mangoes
  • Onions
  • Garlic cloves
  • Green Chili
  • Curry leaves (optional)
  • Turmeric powder
  • Red Chillie powder
  • Roasted curry powder (Garam masala is a great substitute!)
  • A small piece of cinnamon (optional)
  • Salt & Sugar

Tips and Tricks to cook a Sri Lankan Authentic Raw Mango Curry

  • Do not roasted the spices and mangoes for more than two minutes. Otherwise the spices will burn and you will end up with a weird tasting curry.
  • Substitute roasted curry powder with garam masala or any curry powder of your choice. Here is my recipe for homemade roasted Sri Lankan curry powder.
  • Using raw mangoes will give the best mango curry. If mangoes are ripe, the curry will be much sweeter. Fresh mangoes will give the best tasting curry, if you are lucky to have a mango tree (or neighbors with a mango tree!)
  • To make a good curry, do not peel off the mango skin. This will add more texture to the curry, and retain the mango flesh from dissolving into the curry.

Spicy mango curry

Ingredients

  • 2 Garlic cloves chopped
  • 1 Green mango Sliced, Sour mango, NOT ripe
  • 1 Green chillie chopped
  • 1/2 Red Onion chopped
  • 1 cup Water
  • 1 cup Coconut oil Use any preferred oil

Seasoning

  • 1 tsp Turmeric powder
  • 1 tsp Chilli powder
  • 1 tsp Roasted curry powder
  • 1 tsp Salt
  • 1 tbsp Sugar

Instructions

  • Heat coconut oil in pan, and add onions, garlic and green chillies. Saute for 5 minutes
  • Add sliced mango and all seasoning (except sugar) and saute for 1-2 mins
  • Add 1 cup of water, cover pan and cook on low heat for 20 minutes
  • Add 1 tablespoon of sugar and mix well
  • Cook for 3-5 mins and turn off heat

Ingredients to make a simple raw green mango curry. One green mango, half an onion, garlic cloves and green chilies.

Chop the green mango,  onions, garlic, and green chillies to use in this curry. This green mango is starting to ripen a little bit.

Add one tablespoon of oil in to a pan. Turn on medium-high heat and add the sliced onions, garlic and green chillies into the pan

Once the onions are golden brown, add the array of spices (one tsp curry powder and red chili powder) and sliced mangoes to the pan. Cook for 1-2 minutes on low heat to roast the spices

Add one cup of water, close lid and cook on low heat until mangoes are fully cooked. Add one tablespoon of sugar (add more sugar is using a super sour, green mango), mix well and cook on medium heat for 3-5 minutes.
