This is a Sri lankan leeks stir fried dish, prepared spicy using chillie flakes. This dish is vegan, vegetarian, super easy and fast to prepare! Takes only 10 minutes to cook! Adding tomatoes is optional for this dish. For a dry fried dish, don’t add tomatoes. For a more mushy, curry-like dish (or to get rid of tomatoes in your fridge ), add tomatoes.
If you prefer a curry instead of a stir fry, try this scallion and tomato curry instead. It is creamy, spicy and great comfort food. You can use either scallions or leeks to make this curry. This leeks stir fried dish pairs well with mild dhal curry, shrimp curry, zucchini curry or a simple omelette.

Stir Fried Leeks
Ingredients
- 1 Leek, big or 2 small leek
- 1 Tomato optional
- 1 Jalapeno or serrano pepper
- 2 Garlic cloves
- 1/2 Red Onion
- 1 tbsp Coconut oil or Olive oil
Seasoning
- 1 tsp Turmeric
- 1.5 tbsp Salt
- 3 tbsp Chillie flakes
Instructions
- Chop all veggies into medium chunks
- Heat oil in a pan, add all the chopped ingredients and seasoning
- Cook on medium heat for 10 mins
